This also doesn’t need to be done with scrambled eggs, it works well with poached, fried, boiled and even an omelette. Of course, if you don’t like chilli it can be left out but the kick works really well in a dish like this. Please enjoy.

1 Tbsp (14g) – Clarified Butter or Regular Unsalted Butter
1 – Shallot, Finely Diced
1 – Long Red Chilli, Thinly Sliced, Half Saved For Garnish
6 – Large Free Range Eggs, Beaten
2 Tbsp (40ml) – Thickened Cream
Seasoning To Taste

Sourdough or Bread of Choice, Sliced
Butter To Spread
Pecorino Romano Cheese To Serve, Freshly Grated
Fried Shallots, Garnish
Coriander (Cilantro), Garnish
Sriracha, Garnish
Cracked Black Pepper, To Serve
