4. BBQ BACON-WRAPPED CHICKEN (from Carrie Elle recipe club):
1 bottle of BBQ sauce (12-16 oz)
4 chicken breasts
1 onion, diced
1/2 cup brown sugar
1 Lemon (juice 1/2 or whole lemon)
pepper (to taste)
Bacon (2 slices for every chicken breast)
Wrap each chicken breast in two slices of bacon.
Put onions in the bottom of the crockpot, followed by the chicken. Then sprinkle as much pepper as you’d like and then add the lemon juice. Next pour the bottle of BBQ sauce over it all and then top with brown sugar.
Cook on high for 3 hours or low for 6 hours.
It’s great served with homemade mashed potatoes!!
5. PASTA E FAGIOLI:
1 lb ground beef (I use 1 lb italian sausage)
2 whole carrots, diced
4 celery stalks, diced
1 medium onion, diced
2 cloves garlic, minced
28 oz can crushed tomatoes
28 oz beef broth or stock
1 tsp dried oregano and 1 tsp dried basil (I just use italian seasoning)
salt and pepper to taste
1 can (15 oz) cannellini beans (or great northern beans)
1 can (15 oz) light red kidney beans
1 cup ditalini pasta, uncooked (or similar shape pasta – elbows work great)
Parmesan cheese, grated
1. Put everything except beans, pasta and cheese into a 6 quart slow cooker and stir, being sure to break up the meat.
2. Cook on low 7-8 hours or high 3-4 hours
3. 30 minutes before the end, stir in beans (drained and rinsed) and pasta. Add more salt and pepper if desired.
4. Sprinkle grated parmesan cheese on top.
Serve with some garlic breadsticks and salad and you’ll feel like you’re at Olive Garden!
6. BBQ PULLED PORK:
3 lbs pork
2 cups chopped onions
1/2 cup light brown sugar
1/4 cup white vinegar
6 oz. tomato paste
1 &1/2 Tbsp chili powder
1 tsp dry mustard
2 tsp worcestershire sauce
2 tsp salt
Combine all ingredients in slow cooker. Cover. Cook on high for 7-8 hours. Shred meat with a fork. Mix into sauce and heat through allowing some of the juices to absorb into the meat. Serve on hamburger buns.
COLE SLAW RECIPE:
1 bag slaw mix
2 Tbsp (or so) Duke’s mayo
1 small jar sweet relish
1 tsp each salt and pepper
1 tsp garlic powder
1 Tbsp white vinegar
Mix everything together and refrigerate for at least an hour before serving.
